That is weird. I can't think of anything a dealer would do that would change the acceleration or top speed. Other than valve adjustment, and maybe changing the plug, there isn't anything in the factory manual "tuneup" instructions that would call for other setting changes. Unless they messed with the carb settings, etc., which I don't think they'd do. I think the dealer should give you a list of what they did, maybe you could solve this by going "backwards" through their tuneup routine.
